Recipe: Mexican Fajita Bowls with Mango Salsa

Now that the weather is getting nicer, I'm craving all things light, flavourful and healthy. I love using fresh ingredients to turn quick and easy meals around in time for dinner. Last night, I made these delicious Mexican Fajita bowls which held up great for lunch today too.

Whenever I can make enough and save myself the time of prepping two separate meals, I'm a happy camper.


Here's how you can make these bowls at home too (with a little help from the grocery store).

Chicken Fajita Filling

Preparation Time: 10 minutes
Cook Time: 20 minutes
Makes 4 servings

3 chicken breasts, cut into strips
1 red pepper, cut into strips
1 onion, sliced
1/2 tsp cumin powder
1/4 tsp salt
1/4 tsp red chili powder
1/2 tsp spicy taco seasoning
1/2 Tbsp cooking oil



1) Add oil to a pan on medium heat.
2) Add the onions and saute.
3) Add the chicken and cook until tender (about 15 minutes).
4) Add the red peppers and the seasoning and continue to cook until the chicken is white and opaque.  


If you really want these bowls to be next level delicious, you're going to want to prepare some fresh mango salsa. Good thing, it's super quick and easy and your dinner is going to be ready in no time. 

Mango Salsa

Preparation time: 10 minutes

1/4 tsp sea salt
1 mango, peeled and diced
1/4 spanish onion, diced
1 lime, juiced
2 Tbsp cilantro, chopped
1/4 red pepper, diced

Mix all ingredients and enjoy!

To assemble the bowls

The beauty of the chicken fajita filling recipe is that you can use it to wrap up in a tortilla or as a topper for salad, or on top of these rice/lettuce bowls as I did.

To make a hearty but healthy meal start with a bed of lettuce and add some brown rice, store bought salsa, store bought guacamole and scallions. You can top it off with the chicken fajita filling and mango salsa and trust me - everyone will be wanting more.
