Quick and Easy- Apple Pie Oats

Becoming a breakfast person is a something I've been working on this year. It is not much of a walk in the park for someone like me who could wake up in the morning and literally eat left over chinese take-out. (I LOVE dinner foods for breakfast).

Since I know that the first meal of the day is important (we've literally been fasting for 8 hours), I'm trying to make an effort to eat more breakfast foods in the a.m.

The main deterrent on my morning mission is time. There's never enough in the mornings, right? You're rushing to get ready, then get out the door and there's no way we can throw prepping a whole meal in there.

I've managed to expand my breakfast food file lately with the addition of avocado toast, peanut butter and banana on toast and hummus on toast...but sometimes...I just don't want toast. I'm not much of a porridge person, but since I love chia pudding, I figured I could learn to love oatmeal too.


I've found that "Quick Oats" are a great way to get started on the oatmeal train. I can prepare them easily, quickly and the possibilities for toppings are pretty much endless.


Today I experimented a little and came up with a healthy and delicious spin on oatmeal that I know I'll be craving again soon. Bonus? It tastes like apple pie!



Apple Pie Oats
makes 2 servings

Ingredients: 
1 cup of quick oats
1 1/2 cups of water
a pinch of salt
maple syrup to taste
1 apple, chopped
1/2 tsp cinnamon 
flax seeds(optional)
Bran flakes/bits (optional)

Step One Put the water in a pot and bring to a boil
Step Two Add a pinch of salt and the quick oats to the pot
Step Three Stir about 3 minutes until the oats soften and the liquid thickens
Step Four Portion into two bowls and top with chopped apples, cinnamon and optional toppings like maple syrup (to sweeten), bran flakes or flax seeds
