A fresh start to your day

I visited my aunt (more like friend) recently for tea and was simply smitten with the fresh wraps she served. They reminded me of something you'd eat in California...light,fresh and fruity. 

I had to recreate this wrap and thought it would be a great alternative to toast at breakfast, can be made ahead and served for lunch or enjoyed as a snack. Really it's perfect for anytime of day and fairly simple to make. 


I made this "California Wrap" using a whole wheat tortilla but you can use spinach, sundried tomato or whatever you have on hand. 

I topped it with hummus, baby romaine, blueberries, raspberries, feta and roasted spiced peanuts. You can add pretty much any leafy green or fruit to this (arugula and peaches or strawberries would be good) and any nut or seed. I just loved the combo of sweet, salty, fresh and crunchy. As an added touch you can add a fruity salad dressing to serve as a sauce- perhaps tangerine or raspberry vinagarette would go well. 

All in all it's a light, fresh meal idea for any time of day and it's easy and quick to make. Can't beat that! Enjoy :)
