Chia seed pudding

One of my absolute favourite ways to use superfood Chia seeds are to make them into a delicious pudding. You can use this recipe for dessert but I love this as a breakfast treat in place of a parfait.



In order to make my life easier in the morning, I soak my chia seeds the night before. This is also an excellent make ahead option if you are into meal prep. You can make a big batch of this and keep it in your fridge for about a week.

Basically you need 3 things: Chia seeds, a liquid and some added flavour.

Here is the basic recipe for the pudding I make and I am playing around with other flavours too (will update you when I find some delish combos)


To make two servings of Chia pudding:

1/3 cup of chia seeds
2/3 cup of almond milk (I use natural unsweetened but you can use any flavour you like)
1/2 cup of chopped fruit (berries, mangoes and banana work well but again you can use anything that you like)
2 tablespoons of vanilla greek yogurt (per serving)
optional- nuts and seeds
optional- sweetner, agave nectar, stevia to taste

To make a week's worth of Chia pudding for two people (10 servings I use 1/2 a cup of chia seeds and 1 cup of almond milk)

Directions:
1)Slowly mix the chia seeds and almond milk together in a bowl. Add the seeds little by little and mix well


2) Let the pudding set in the fridge. If you are making this the night before you will need to portion out what you need for that morning and mix a little more almond milk in before you eat it, as the seeds will soak up most of the liquid overnight and become jelly-like). If you are mixing this and serving soon after, allow your pudding to set for 30 minutes.

3) Portion the pudding into small bowls and mix in the sweetener of your choice (optional)

4) Add a dollop (about 2 tblsp. to each serving) of vanilla greek yogurt to your pudding

4) Add chopped fruit, nuts and seeds according to your taste

5) Enjoy!

It's really that simple and besides the 30 minute set time is very quick and easy to make. Not to mention the health benefits that chia seeds provide, which you can read about in my previous post. Hope you enjoy making and eating this as much as I do!
