The greenest, leanest potato salad

Whoever said potatoes were bad for us needs to come and talk to me. It's not that potatoes are unhealthy...they are vegetables! But they get a bad rep because of the way we eat them...mostly withh sour cream or deep fried...obviously not exactly figure friendly. 

But with the skin on, you get fibre, starch (energy), vitamin B6 and about 27 mg of Vitamin C (read: 45% of your daily intake). What ? How come no one ever told us this before? Beats me. They have a bad rep but prepared correctly, they can be our best friends...or at least an aquaintence ;) 


I was craving a delicious BBQ meal, it's the season and all. So I whipped up this potato salad. It was part experiment but I stuck with what I know, so I left the potatoes with the skin on, washed them well, cubed and boiled them. Then I drained them off and shocked them with cold water to cool them down and stop the cooking process. 

Next I chopped some celery, coriander and a lot of mint. Added some pickles and green onion (both chopped). 

I'm trying my best to eat clean this week so I did not reach for the mayo or miracle whip for this recipe. Instead I used a few tablespoons of plain greek yogurt. The thing is, greek yogurt is a little tangy so I thought to sweeten it and change the flavour I'd add some Dijon mustard and then honey mustard (about a tablespoon each). After that I hit this with some salt and pepper and it was probably the best potato salad I've ever made. Light, green, creamy...and it really hit the spot!
